I've made this recipe a couple of times now, with and without the compote. They stand up quite well just as plain waffles - crispy, fluffy yet still hearty. I omit the orange peel, use all white whole wheat flour and substitute liquid whey for the water. For some reason buttermilk waffle recipes are hard to come by unless they are "flavored" or seasonal; but this one makes a good basic waffle that I will keep on the regular rotation.

Really, really good. I made this when we had 'breakfast for dinner' one night. Mine also did not get that crispy, and I left them in the waffle maker after the 'Ready' button lit up. Will definitely make again, and I'll try crisping them up in the toaster oven.
