Citrus Shrimp Refresher

Ingredients

  • 8 large shrimp, peeled, butterflied, and tails removed
  • 1 cucumber, peeled and chopped
  • 1 pink grapefruit, peeled and sliced
  • 1 lime, peeled and sliced
  • 4 teaspoons fresh cilantro, minced
  • 1 avocado, cubed

Preparation

1. Combine all ingredients in a small bowl; marinate for 10 minutes. Distribute evenly into 4 chilled martini glasses; serve.
