Citrus-Mint Gremolata
Gremolata is an Italian garnish of parsley, lemon, and garlic usually used to sprinkle over veal shanks or other meat and pasta dishes. Here, we've replaced the garlic and parsley with mint and toasted pine nuts for a fresh update.
This recipe goes with Lamb Soup With Spring Vegetables
Yield: Makes about 1/4 cup
Ingredients
- 2 tablespoons pine nuts, toasted
- 2 tablespoons chopped fresh mint
- 1 tablespoon grated lemon rind
Preparation
- Combine pine nuts and remaining ingredients in a small bowl.
