Citrus Filling

  • Yield: Makes approximately 2 cups

Ingredients

  • 3 egg yolks, lightly beaten
  • 1/2 cup sugar
  • 1/3 cup water
  • 2 tablespoons all-purpose flour
  • 6 tablespoons fresh orange juice
  • 1/2 teaspoon grated lemon or orange rind
  • 2 1/2 tablespoons fresh lemon juice
  • Pinch of salt

Preparation

Cook all ingredients in a small saucepan over medium-low heat, stirring constantly, 11 minutes or until thickened. Cool. Chill 30 minutes.
