Cinnamon Loaves

Yield 2 loaves

Ingredients

  • 1 (18.25-ounce) package yellow cake mix with pudding
  • 4 large eggs
  • 3/4 cup vegetable oil
  • 3/4 cup water
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar
  • 3 tablespoons ground cinnamon

How to Make It

  1. Beat first 5 ingredients at high speed with an electric mixer 3 minutes. Pour half of batter evenly into 2 greased and floured 8- x 3 3/4-inch disposable loafpans.

  2. Stir together sugar and cinnamon; sprinkle half of sugar mixture evenly over batter in loafpans. Pour remaining batter evenly into loafpans, and sprinkle evenly with remaining sugar mixture. Gently swirl with a knife.

  3. Bake at 350° for 45 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks. Store in freezer, if desired.

  4. Minature Cinnamon Loaves: Pour half of batter evenly into 5 greased and floured 5 3/4-x3 1/4-x 2-inch disposable loaf pans. Sprinkle evenly with half of sugar mixture. Pour remaining batter into pans; sprinkle with remaining sugar mixture. Swirl with a knife. Bake at 350° for 35 minutes or until a wooden pick inserted in center comes out clean.
