Cinnamon-Chocolate Chip Ice-cream Balls

Yield 6 servings

  • 1 1/2 cups cinnamon-sugar whole wheat-and-rice cereal, crushed
  • 1/2 cup semisweet chocolate mini-morsels
  • 1 cup finely chopped pecans (optional)
  • 1/2 gallon ice cream
  • Caramel syrup

How to Make It

  1. Combine crushed cereal, morsels, and, if desired, pecans in a large bowl.

  2. Scoop out ice cream, and shape into 6 (3-inch) balls.

  3. Roll balls in cereal mixture, coating evenly. Place in a 9-inch square pan; freeze 2 hours or until firm. Drizzle with caramel syrup before serving.

  4. Note: For testing purposes only, we used Cinnamon Toast Crunch cereal.
