Cilantro Slaw

Ingredients

1/2 small head napa cabbage, thinly sliced (about 4 cups)
1 (8-oz.) can pineapple tidbits, drained
1/3 cup thinly sliced green onions
1/3 cup chopped radishes (about 2 large)
1/4 cup thinly sliced sweet onion
1/4 cup shredded carrot
1/4 cup finely chopped fresh cilantro
2 tablespoons Champagne vinegar
1 tablespoon olive oil

Preparation

Toss together all ingredients in a bowl. Season with salt and pepper to taste. Cover and chill 30 minutes.
