I use this recipe all the time for freshly caught fish. (Mahi, grouper, etc) I get asked to make this all the time. It's the best. I don't always follow the recipe, I put in lots of cilantro, and more vinegar. I make big batches of it.
Cilantro-Lime Vinaigrette
Ingredients
- 1/4 cup fresh lime juice
- 2 tablespoons sugar
- 3 tablespoons rice wine vinegar
- 2 tablespoons olive oil
- 2 teaspoons finely chopped fresh cilantro
- 1 garlic clove, minced
- 1 shallot, minced
- 1/4 teaspoon salt
- 1/4 teaspoon coarsely ground pepper
Preparation
- Whisk together all ingredients until blended.
