Cilantro-Lime Topping add Southwestern flair to grilled corn.
This recipe goes with Grilled Corn Cobettes
- 1 New Mexico chile
- 1/4 cup butter
- 1 tablespoon chopped cilantro
- 1 teaspoon lime zest
- 1 teaspoon lime juice
- Briefly toast chile in a pan, then finely chop and set aside. In a food processor, whirl remaining ingredients until smooth. Spread butter on corn and sprinkle with chile.
