Cilantro-Lime Topping

Cilantro-Lime Topping add Southwestern flair to grilled corn.


  • 1 New Mexico chile
  • 1/4 cup butter
  • 1 tablespoon chopped cilantro
  • 1 teaspoon lime zest
  • 1 teaspoon lime juice

How to Make It

  1. Briefly toast chile in a pan, then finely chop and set aside. In a food processor, whirl remaining ingredients until smooth. Spread butter on corn and sprinkle with chile.
