Ingredients

  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon minced shallots
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 garlic clove, crushed
  • 6 cups romaine lettuce
  • 1/2 cup diced yellow bell pepper
  • 1/4 cup sliced green onions

Preparation

  1. 1. Combine first 8 ingredients in a large bowl; stir well with a whisk. Add lettuce, bell pepper, and green onions; toss gently to coat.
