Makes 3/4 cup
2 tablespoons fresh ginger, minced
2 tablespoons white wine vinegar
1 jalapeño chile, seeded and diced
1 cup fresh cilantro
1/2 teaspoon salt
1/3 cup vegetable oil
Process first 5 ingredients in a blender until smooth. With blender running, gradually add oil in a slow, steady stream; process until smooth. Cover and chill until ready to serve.
