Cilantro-Chile Dressing

 

 

This recipe goes with Cornbread Cobb Salad

Ingredients

  • 1/3 cup chopped fresh cilantro
  • 1/3 cup rice wine vinegar
  • 1 serrano chile, seeded and coarsely chopped
  • 2 garlic cloves, chopped
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup vegetable oil

Preparation

1. Process first 7 ingredients in a food processor or blender until combined, stopping to scrape down sides. With processor running, pour oil in a slow, steady stream; process until thickened.
