I LOVE THIS SOUP. I find myself constantly coming back to this delicious and easy recipe when I'm looking for a quick and healthy dinner - which is pretty much every night. I usually have all of the ingredients needed in my pantry. I serve it over brown rice with a dollop of thick Greek yogurt. I will say, the smoked Spanish paprika is very expensive but I love the depth it brings to this dish. Even my steak & potatoes-loving boyfriend loves this meal. It has gone into the regular rotation.
