Combine first 6 ingredients until smooth.
Spray 2 frying pans (7 to 10 in) with Pam, on med. high heat.
Pour ladle full of batter onto pan, and tip to cover bottom.
Cook until set and bottom is lightly brown.
flip onto other pan and brown lightly (wont take as long)
Place on wax paper until ready to roll.
Mix cream chees, sour cream, brown sugar, and cottage cheese in bowl
Fille crepes with tablespoon and 1/2 of mixture.
Place crepes in large glass or ceramic cake pans (13 X9)
cover with canned fruit of choice. YOu can prep these the night before, and cook in the morning.
