Christmas Creamed Corn

Ingredients

  • 1/4 cup butter
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 garlic cloves, minced
  • 3 (10-oz.) packages frozen whole kernel corn, thawed
  • 3/4 cup heavy whipping cream
  • 1 teaspoon sugar
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper

Preparation

  1. Melt butter in a large nonstick skillet over medium heat. Add onion, bell pepper, and garlic; sauté 8 minutes or until tender.
  2. Process 1 package of corn and 1/2 cup cream in a blender or food processor until smooth. Add puree, remaining 1/4 cup cream, and remaining corn to skillet. Stir in sugar, salt, and pepper. Cook, stirring often, 5 minutes, or until heated and most of liquid evaporates.
