Chopped Salad with Basil

This recipe goes with Cuban Sandwiches

  • Yield: 4 servings

Ingredients

  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/2 sliced, seeded cucumber (1 cup)
  • 1 chopped, seeded yellow bell pepper
  • 1 cup halved cherry or grape tomatoes
  • 1/2 thinly slicked small red onion
  • 1/4 cup roughly chopped fresh basil
  • 3 tablespoons olive oil

Preparation

In a large bowl, whisk together red wine vinegar, olive oil, Dijon mustard, and

kosher salt. Add cucumber, yellow bell pepper, halved cherry or grape

tomatoes, red onion, and chopped fresh basil. Toss well.
