How to Make It

In a large bowl, combine 1 bunch watercress (4 cups), 1 unpeeled green apple cut into 1/2-inch pieces, 1/4 cup orange juice, 1 tablespoon olive oil, 1 tablespoon honey, and 2 tablespoons chopped fresh mint and toss well. Break up 4 ounces of feta cheese into small pieces. Divide the salad among 4 plates and top each with some of the feta cheese, drizzle with additional honey (about 1 tablespoon total), and top with freshly ground black pepper.
