How to Make It

Step 1

Combine first 4 ingredients in a small bowl. Stir just until dry ingredients are moistened. Fold in peppermint candy.

Step 2

Spoon batter into a muffin pan coated with cooking spray, filling two-thirds full. Bake at 425° for 13 to 15 minutes or until tops spring back when lightly touched. Remove from pan immediately.

Chef's Notes

To crush peppermint candy, seal it in a heavy-duty zip-top plastic bag and crush it with a smooth-bottomed meat mallet or a heavy rolling pin.
