  • 1 (7-ounce) package chocolate-chocolate chip muffin mix
  • 1/3 cup fat-free milk
  • 2 tablespoons unsweetened applesauce
  • 1 egg, lightly beaten
  • 1/3 cup crushed peppermint candy (about 12 round peppermint candies)
  • Vegetable cooking spray

How to Make It

  1. Combine first 4 ingredients in a small bowl. Stir just until dry ingredients are moistened. Fold in peppermint candy.

  2. Spoon batter into a muffin pan coated with cooking spray, filling two-thirds full. Bake at 425° for 13 to 15 minutes or until tops spring back when lightly touched. Remove from pan immediately.

Cook's Notes

To crush peppermint candy, seal it in a heavy-duty zip-top plastic bag and crush it with a smooth-bottomed meat mallet or a heavy rolling pin.
