Loved these cookies! The only change I made was to double the peppermint extract. A few more tips: spray vegetable oil cooking spray on a spatula and measuring cup to make it easier to work with the sticky marshmallow fluff, and chill the dough a bit before rolling it into logs. I cheated and used the freezer. :) They set up nicely if you put them in the fridge when you are done. These got RAVE reviews from my kids and family on Thanksgiving, and I'm making them for gifts for Xmas!
