Chocolate-Marzipan Pinwheels

  • 2 cup(s) butte
  • 1 1/3 cup(s) sugar
  • 1 teaspoon(s) salt
  • 3 large egg yolks
  • 2 teaspoon(s) vanilla
  • 4 3/4 cup(s) flour
  • 14 ounce(s) almond paste
  • 1/2 cup(s) cocoa powder
  • 2 tablespoon(s) egg whites
  • 1 teaspoon(s) almond extract


  1. Sugar cookie dough: Cream butter, sugar and salt. Add egg yolks and vanilla; beat until smooth. Add flour gradually, mixing until incorporated.

  2. Chocolate dough: Measure out 1 cup of sugar cookie dough. Beat dough, almond paste, cocoa, almond extract and egg whites until smooth. Divide remaining sugar cookie dough and chocolate dough into two equal pieces. Roll each piece into a 10x15-inch rectangle. Place a chocolate rectangle on top of a sugar cookie rectangle and roll from the long edge to form pinwheel. Chill at least 2 hours. Slice 1/4-inch thick and back at 350 degrees for 10-12 min.
