Ingredients

  • 2 cups water
  • 1 tablespoon butter
  • 1 tablespoon minced chipotle chile, canned in adobo sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup rice
  • 1 tablespoon chopped fresh cilantro

Preparation

  1. Combine water, butter, minced chipotle chile, salt, and freshly ground black pepper in a small saucepan. Bring to a boil. Add rice; stir gently. Cover, reduce heat, and simmer 18 minutes. Stir in cilantro.
