Chipotle Macaroni and Cheese

    I personally would reduce the amount of Chipotle as it was a bit hot for my taste. But otherwise this recipe was great. I added some dried fried onion rings on top instead of bread crumbs. I also used red pepper in place of green, just my preference. I will add some ground beef or turkey to this recipe next time. I really liked this recipe, will make it again.

    We loved this mac and cheese! I would make this again for sure. I was worried about the cottage cheese, but I thought it was fine all mixed in. I used just the amount of chipotle, we loved the smoky flavor throughout the dish.

    I really liked this and will make again. I doubled the green pepper, onion, and garlic, and added double the chipotle sauce. A little advice - do NOT overcook the noodles. I did, and it got mushy. I will be more careful next time.

    I have been making this recipe for years. The kids & my husband just love it. We don't make traditional macaroni & cheese any more.This is VERY qick & easy to make, ideal for weeknights. It has a smokey, swwet, & spicy flavor, but it is not hot in anyway.

    Consider putting the cottage cheese into the food processor until it's the consistency of sour cream. That will add a creamy dimension and eliminate any curds. That's the only change I made to this truly delicious recipe. All this needs is a salad and/or a green vegetable.

    Pretty good mac and cheese. Based on the other reviews and because I was using a lower calorie whole wheat elbow mac I decided to skip the cottage cheese and just use more cheddar. I also added some extra chipotle and adobo sauce because we like the flavor and spicy food. Served it with 3 bean salad and mixed greens. The family liked it, weren't wowed but everyone definitely ate up.

    This has become a staple dish of mine! I bring it to pot-lucks and parties, and I always bring home an empty dish! Everyone loves it. :) It's easy to make, and easy to tinker with. We like to turn up the chipotle heat, and my father-in-law likes to add chorizo! I highly recommend it, especially if you like spicy dishes.

    Love this recipe! I made it only because I had left over Chipotle Chiles from another recipe and we love mac & cheese, so I figured we'd try it. Have made it several times now, for several different occasions and always gets raves. Most recently took to our annual block party. Afterwards, I had to print out numerous copies of the recipe since so many people asked for it. The only addition I made is I add a bit more cheese on top after cooking and place it under the broiler for a few minutes to get a nice cheesy crust.

    This was good, but I didn't take the first bit and say "WOW-IE!" I had to add about 50% more cheese to be satisfied with it, and then it still wasn't knock-your-socks off. I would probably add an extra can of Rotel tomatoes (I used the mexican festival variety) next time. My boyfriend kept saying it needed bacon, but I don't eat much meat, so we didn't have any on hand to text that theory. I do like one reviewer's suggestion of chorizo, however.

    This recipe is my husband's all time favorite. He askes me to make it all the time. Friends specifically ask me to bring it to parties and there's never leftovers

    So So yummy!!! I used Wegmans chipotle lime butter, liquid egg whites and whole wheat panko breadcrumbs. Once I added the tomatoes to the pan it thickened almost immediately. I baked and served this in individual ramekins because I cut the recipe down for two. However, next time I would make the whole thing and opt for leftovers!!!

    This was really good! You can't tell it's light at all and the portion size was very generous. I added like double the chipotles they recommended and still needed some hot sauce though, I love spicy food. It was a little runny, I think next time I would maybe do 1/2 cup of milk instead of a full cup, or drain the tomatoes.

    Delicious! Followed recipe exactly but added 1 cup peas and had a meal. For us just enough bit. Definitely make again!!

    Really, really good. Creamy and a nice smokey flavor from the chipotle. I was concerned it would be very spicy but it was perfect (for us). Perfect dinner for "Meatless Monday".
