Chipotle Caesar Dressing

Yield Makes 1 1/4 cups

Ingredients

  • 2 garlic cloves
  • 1 to 2 canned chipotle peppers
  • 1/2 teaspoon salt
  • 1/3 cup fresh lemon juice
  • 1/3 cup egg substitute
  • 1/4 cup shredded Parmesan cheese
  • 1/2 cup olive oil

How to Make It

  1. Pulse first 3 ingredients in a food processor 3 to 4 times or until garlic is minced. Add lemon juice, egg substitute, and Parmesan cheese. With food processor running, pour oil through food chute in a slow, steady stream; process until smooth. Cover and chill until ready to serve.
