I don't know how this recipe is getting such good reviews. Not good!

Good weeknight recipe. I halved to recipe for 3-4 servings. I added 1/4 cup thawed corn and 1/4 cup of roasted chicken breast. The sour cream was a nice touch. My family loved it. This will be a regular weeknight meal at our house.

I loved this for a quick and easy weeknight meal. The leftovers were better than then we first ate these.

This was a flavorful, quick dinner. The chipotle chili powder is a must as it has a very different flavor from regular chili powder; it adds heat to the beans. I added alittle mashed avocado to each burrito and it was great!

This is a good recipe. Nothing to write home about, but good for an easy weeknight meal with some Mexican Rice. I might keep this "on the list" because my husband could even whip these up!

I give this three stars because it is a "good, solid recipe." It's easy and fast and perfect for a weeknight meal. The flavors are very good but next time I would add some cumin to give it even more spice.

Delicious, as well as quick and easy, although I am not so great at putting the burritos together so they look nice, which means that everyone assembles their own in my house. ;) Due to ingredients I had on hand, I subbed pinto beans for the kidneys, bottled chipotle salsa for the purchased fresh (so they were double chipotle'd), canned tomatoes for the fresh, and nonfat Greek yogurt for the sour cream. I also used whole-wheat tortillas in place of reduced-fat plain. This is a keeper.

Always thought beans were boring as the primary protein. So wrong. Super fast and easy. My two kids 2 & 4 loved them too. Have also used the bean recipe as a layer in a chicken enchilada casserole. Very versatile. Love it.

Made with canned chili in adobo instead of chili powder. Very good and simple. Would probably make a double recipe next time to be sure there was enough for leftovers. I would have rated this 4-stars, but I don't think I would serve bean burritos to guests, no matter how good the recipe.

I've made this recipe several times and it's always good and fast. This time I used corn tortillas and fried them in 1 teaspoon of canola oil flat, added the bean mixture, folded the tortillas, and cooked until crisp on both sides. Adding the fillings after it was cooked. It was yummy. A real go to vegetarian recipe.

I used regular chile powder and husband and I just fixed one burrito each. Good flavor and easy. We put in more sour cream than one tablespoon as they were a little dry. A definite repeat.

The chipotle flavor was wonderful - flavorful without over powering. The leftovers were great for lunches - I individually wrapped the burritos with the beans and tortillas then added the toppings after reheating them. A nice departure from my usual sandwich.

I made these for SuperBowl Sunday to satisfy the boyfriend's craving for something "fun" and my desire for something healthy while we watched the game. We both thought these were tasty, and one was very filling. I didn't halve the recipe so I'm glad to hear that the leftovers reheat well. We contemplated using the leftovers for nachos but we'll probably just have burritos again later this week.

Yum! This was really good, but I did make some changes: I doubled the garlic and I used pinto beans rather than kidney beans. I replaced the chipotle powder with a mix of ancho chile pepper, chile powder and cayenne pepper but I doubled the amount recommended by the magazine's recipe. I also added cumin and oregano. I replaced the cheese with 2% sharp cheddar and instead of reduced fat tortillas (which had partially hydrogenated oil) I used whole wheat tortillas. Instead of having guacamole and tortilla chips on the side, as the magazine suggested, I sliced up fresh avocado and put it on the burrito. I will definitely make this again with the changes... its perfect for an easy weeknight meal!

I LOVED this burrito alternative! I forgot to buy the kidney beans, but I substituted lentils instead. I used whole-wheat burritos, but they ripped and were messy, so I wouldn't use them again for this recipe. The homemade guacamole was out of this world. We had the Baked Lays tortillas to dip. No one would guess that the whole meal was vegetarian and lower in fat!!

Reheats well, good flavor, inexpensive ingredients, double it for leftovers. The filling would be good in a five-layer dip, too. What I did differently: - I added one can of kernal corn for texture and depth of flavor - There wasn't enought chipotle flavor for me, so I added 1/4 c. chipotle sauce (you can find it in the Hispanic foods section of the supermarket) - Replaced scallions for onions -

I doubled this recipe to feed 10 people and they loved it. Doubled amount of chipotle chili powder to add more spice and heat, and added poached shredded chicken breast. Made with homemade tortillas and fruit salad.

We really liked these! The spice was just enough and the toppings really made them perfect. Instead of serving chips and guacamole as suggested in the magazine print of this recipe, we put about 1-2 TBS of guacamole inside the burritos. We had leftovers and they were great even cold the next day. These burritos reminded my husband of an "kicked up 7-layer burrito" (from Taco Bell....his favorite in college).

This recipe has become a regular in our dinner repertoire! We've made it for guests and everyone enjoys it. The mashed bean concoction with chili powder is the novel aspect of this recipe and turns out delicious. Often we'll saute some chicken breasts / thighs to add to the burrito.

This is one of my favorites! It's so simple and delicious. It's great as leftovers too. I've done this when it's just my husband and I, and I've made it for football games. Could easily be made the night before.

Pretty tasty and really easy weeknight meal. I added a bit more chipotle and added some cumin. Would be good with some jalapenos too I bet! I used chopped tomato in place of salsa. I did an avocado / sour cream mash on top and it was delicious. Worth a try.

Good everyday family recipe! Increased the garlic, added ground cumin and oregano, used 4 T. salsa, and subbed shredded cabbage for the lettuce (good crunch!). Good heat, but not overpowering. This serves 4, not 6, IMHO. Will make again.

My husband and I thought these were delicious. We're trying to eat meatless a couple of times a week and these will definitely be on the list for future meals. The spice level is perfect and the combo of black and red kidney beans made them nice and filling. I added a bit of guacamole and served these with a green salad.

Very flavorful, healthy, and great for a weeknight. We used iceberg lettuce cups instead of the tortillas -- the crunch was actually an added bonus, since we were aiming to eliminate some carbs more than anything. We'll be making this lots.

This recipe is really good. Nice quick weekday meal. I recommend using hard tacos to add some texture and crunch instead of flour tortillas. I also used a hot salsa b/c we like spicy! I think adding spicy salsa was the key b/c it gave it another element. This would also be an excellent appetizer served with tortilla chips. Definately will make this again. (rated it three stars b/c it's not outstanding but a solid recipe)

Love it! My husband and I think they are the best homemade bean burritos we have ever had! The smokey flavor and the nutty flavor from the the toasted garlic make these far superior to canned refried beans.YUMMMM

I made this last night and my husband and I were totally amazed. We used the bean mixture as a quesadilla filling and put the green onion, tomato and cheese on top and then grilled in the quesadilla maker. Served with sour cream, quacamole and salsa with a side of spanish rice. My husband is having the leftovers for lunch today.

I love this recipe. I make it probably once a week, and it is very satisfying. I usually substitute a whole wheat tortilla for the reduced fat one. I also add a golden roasted flax and chia blend to it called fitflax (www.fitflax.com) for added taste, texture and fiber) I heard about FitFlax at Weight Watchers. It is delicious, loaded with Omega 3's, fiber and antioxidants so it not only promotes weight loss, it also is great for your skin, hair and overall health. FitFlax is a low carb/low calorie flax and chia blend that is nutty, yummy delicious (tastes like peanut butter) that is great straight from the bag, and also tastes great in salads or in greek yogurt. It is also filling. I am also looking for recipes that give you a lot of food for the calories and this burrito definitely delivers!

This was tasty and quick and easy to make. I used chipotle chile sauce instead of powder, made smaller burritos with the Trader Joes mini tortillas and skipped the lettuce and sour cream. These are wonderful. I did make a couple of changes based on previous reviews. First, I added some chopped onion to the garlic and also 1/8 tsp grd. cumin. Instead of 1/3 c. water I added 1 8oz. can no salt added tomato sauce and only about 1/4 c. water. My husband, who is not typically fond of bean burritos loved them so much that he decided to take leftovers for lunch the next day. It was a home run!!

  • SuzanneM Posted: 07/09/13

Quick, filling, tasty. I made the recipe as written (adding an ear of corn for some vegetable loading). I felt the bean mixture needed a bit more flavor- either more chipotle chili powder, tabasco or some other spice. I would certainly make this again- as a vegetarian meal, it was filling and satisfying.
