Both my husband and I found this very bland. It's missing something. Salt helped, but it's still lacking. Maybe garlic? Maybe increase the vinegar? We eat a lot of Asian-style dishes, and I'm always looking for a salad or other cold vegetable side dish to go with them, so I'll try this one again with modifications.
I agree with reducing the amount of ginger, but other than that, this recipe is awesome. I would definitely blend the liquid ingredients together with the ginger first, and then pour those over the veggies, because I ended up with some chunks of ginger that made a few mouthfuls a bit spicy.
