Chimichurri Sauce



Makes 2/3 cup

1 cup tightly packed Italian parsley leaves (about 1 bunch, stems removed)
1/4 cup tightly packed cilantro leaves
2 garlic cloves
1/2 teaspoon ground cumin
1/4 teaspoon dried crushed red pepper
1/4 teaspoon salt
1/3 cup olive oil
1/4 cup red wine vinegar


Process all ingredients in a food processor until finely chopped.
