Chilled Watermelon Soup

    I served this soup at a brunch and got rave reviews. It looked beautiful in cut glass bowls with a dollap of yogurt and a spring of mint. I used fresh grated ginger--be careful though--fresh ginger is strong.

    Absolutely delicious! Can be served as a 1st course or dessert on a hot day. I used vanilla yogurt, not plain, but that was the only change. Will definitely serve this to guests!!
