Chilled Shrimp with Saffron Aïoli

Makes about 1 cup, 8 servings

This five-ingredient recipe couldn't be any easier to pull together and makes for a truly impressive, elegant appetizer. Spruce up store-bought mayonnaise (or make your own) with a little fresh lemon juice, a clove of fresh garlic, and an extra-special ingredient: saffron. Some specialty food shops and select grocery stores allow you to purchase smaller amounts of spices, which is great for ingredients like saffron being that it is a pricier spice and you do not want to have an excess that goes stale in your pantry before you are able to use it. 


  • 1 tablespoon warm lemon juice
  • 1 garlic clove, finely grated
  • 1/8 teaspoon saffron threads
  • 1 cup mayonnaise
  • 1/4 teaspoon kosher salt
  • 2 pounds large peeled cooked shrimp, chilled

How to Make It

  1. Combine 1 tablespoon warm lemon juice, 1 finely grated garlic clove, and 1/8 teaspoon saffron threads in a medium bowl; let stand 5 minutes. Stir in 1 cup mayonnaise and 1/4 teaspoon kosher salt. Serve with ice-cold shrimp.
