Chilled Cucumber Soup

Ingredients

  • 4 cucumbers, peeled, seeded, cut into small chunks
  • 4 cups plain yogurt (not nonfat)
  • 2 teaspoons curry powder
  • 1 teaspoon salt
  • 1 clove garlic, minced
  • 1/2 cup chopped fresh mint
  • 6 scallions, white and light-green parts, chopped

Preparation

Put all ingredients in blender or food processor and blend until smooth. Season with additional salt, if desired. Cover and chill 2 hours to allow flavors to blend.
