Chili with Fruit on the Side

  • 6 ounce lean, ground beef
  • 1/4 onion (small)
  • 1/4 cup fresh mushrooms
  • 1/4 bell pepper
  • 1/2 cup canned kidney beans, rinsed and drained
  • 1 1/2 cups canned, crushed tomatoes, low sodium
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 ounce low fat or non fat shredded cheese

How to Make It

  1. Rinse and finely chop onion and bell pepper. Clean mushrooms and chop. In a nonstick skillet, brown meat in oil with onions, mushrooms, green pepper and spices. Drain and rinse kidney beans. Add beans and canned tomatoes with their liquid to mixture. Simmer 10-15 minutes, stirring occasionally. Top with shredded cheese. Enjoy!
