Chili Lime Fish Fry

Ingredients

  • 4 tilapia fillets
  • 1 cup(s) all-purpose flour
  • 2 eggs beaten
  • 1 cup(s) bread crumbs
  • 2 limes zested and juiced
  • 2 tablespoon(s) chili powder
  • 2 teaspoon(s) garlic powder
  • 2 teaspoon(s) onion powder
  • 2 tablespoon(s) thyme leaves or 2 tsp. dried chopped
  • 1/4 cup(s) canola oil
  • kosher salt and black pepper

Preparation

  1. Season the fish with salt and pepper. Arrange 3 shallow dishes. Put flour in 1, eggs in the 2nd bowl. Combine bread crumbs, 1 T lime zest, 2 T of chili powder and the garlic powder, onion powder and thyme in the 3rd bowl. Coat the fish in the flour, then the egg and then the bread crumb mixture.

  2. Heat the oil, about 1/4 cup in a large skillet over medium to medium-high heat. If your pan is not large enough to fry 4 fillets, in a single layer heat the oven to 275 degrees and put a cooling rack on a baking sheet. As you fry the fish , transfer to the rack in the oven to keep warm. Fry the fish until deeply golden and crispy and transfer to a platter. Season with a little extra salt and top with lots of lime juice and serve.
