Chicken with Olives and Lemon

    I have made recipes very similar to this and been let down b/c I thought that the citrus flavor was too strong (i.e.: Rachael Ray!). However, this has to be the BEST one yet! I followed the recipe exactly and thought it was amazing! The sauce sounds weird but is the best part of the dish. I served this with couscous and green beans. Will definitely make this again!

    This was a disappointment. It was plenty hot and I only used half the red pepper. I increased the salt, because I almost always do w/Cooking Light recipes. Somehow, it tasted flat, which was a surprise since it had all my favorite spices. In an attempt to make it better (halfway through dinner), I squeezed more fresh lemon juice on it, added garlic salt, and it was better. I neglected to bake it with the lemon slices, which might have helped. I probably won't bother with this again.

    We loved this but we also like spicy food. Its very similar to a curry. If you like strongly flavored dishes you will like it. If not, well I would not recommend it.

    Hm, I'll definitely make this again but with a few modifications. I accidentally forgot the salt but figured the olives would be salty enough. Also thought that I used enough lemon and I definitely didn't. The whole dish was slightly bland like someone else mentioned. The dish looked beautiful though and cooked up well. Just not much flavor, which did surprise me too. All I could taste was heat. It wasn't too spicy but that's all I tasted. Used skinless boneless thighs as the only modification, and no cilantro since I hate it. That really can't be why it didn't taste like much! Plus, there's no way the nutritional information is right. I used 2 other recipe calorie calculators and they ranged from 325-450 per serving.
