Ingredients

  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 4 (4-ounce) skinned, boned chicken breast halves
  • 1 teaspoon olive oil
  • 1/2 cup fat-free, less-sodium chicken broth
  • 1/2 cup dry white wine
  • 4 teaspoons grated Parmesan cheese

Preparation

  1. Preheat oven to 350°.
  2. Combine first 4 ingredients in a shallow dish. Dredge chicken in flour mixture.
  3. Heat oil in an ovenproof skillet over medium heat. Add chicken; cook 2 minutes on each side or until browned. Add broth and wine. Bring to a boil; remove from heat. Cover and bake at 350° for 30 minutes or until chicken is done. Sprinkle with cheese.
