My family absolutely loved this meal (no bread) Even my son who does not like tomatoes loved it!! They asked me to make much more dressing the next time (and they want leftover chicken, too!)!! We grilled the chicken perfectly! It was moist and spicy and tasted great with the salad. Perfect combination!! This is already a family favorite!

Excellent low carb meal!!!! Flavors come together nicely and excited to make it again! I did pound the chicken as I feel it cooks more evenly and is more tender!! Yum.

I have been dying to try this recipe since the magazine came, and finally did so last night. We devoured it!!! I am now spoiled for this home-made ranch dressing - no other will ever taste as good! I made it exactly as the recipe was written except grilled on a grill pan since it was raining here. Everything was perfect. My tomatoes were decent, but I could see this recipe being even better when the fresh ones come in around here. I would absolutely serve it to company and plan to this summer.

Fantastic recipe! Loved everything about it! I used heirloom tomatoes and fresh parsley and thyme from my garden. I didn't change a thing except using a grill pan. Loved the dressing...this will be my go to ranch from now on!

Making this again tonight for the 2nd time. Entire family loved it! Served with grilled french bread. Cooked it all on my Big Green Egg!

Really great! We enjoyed this last night. I doubled the dressing recipe thinking it sounded pretty good and I'd use it in a salad the next day...it turns out it is EXCELLENT. The next time I will probably use chicken with the skin on to keep it moist (removing it when we get ready to eat). Also, I used a little bit of olive oil and rolled my corn in tin foil. Definitely will be making this again very soon. Fantastico!!!!

What an amazing blend of flavors! I used a gourmet tomato medley & a shallot instead of the red onion. I think I'll make this again with some sort of shellfish in place of the chicken!

Light and fresh. Excellent balance! I added a bit of paprika to the dressing to spruce it up a bit.

Loved this summer recipe. The salad flavors are a great start to summer. The chicken was spicy, but just the right amount balanced with the buttermilk dressing. Will use leftovers in a wrap also. Definitely will make again.

Easily make the sauce days ahead. The chicken can be prepped early on as well. I boiled the corn before grilling. It was yummy. Make sure you don't do hot house tomatoes. Garden fresh would be way better in this!

A great, quick, easy summer meal. My only minor complaint is that the chicken wasn't very flavorful which was surprising given the chipotle chile powder. Will try and add some garlic and perhaps more chile powder next time.

I made this last week and had to put it on my list for this week too. Soooo delish! It's winter so I just used my grill pan.

This recipe is awesome! We don't have a grill so I broiled the onions, corn and chicken instead. I'm sure grilled would have been even better! The dressing has a lot of flavor so 1.5 Tbsp is plenty for one serving. Great for summer and more than good enough to serve guests!

This recipe is a family favorite. We turned it into a salad, serving the chicken over Herb Salad Mix and adding a little goat cheese and roasted red pepper. Fantastic! The dressing is a keeper. I double the dressing recipe and give it time to really chill in the fridge.

Excellent recipe! It is perfect for a warm summer night. I broiled the vegetables because our grill wasn't working and I added sliced broiled yellow pepper (removing the skin). There were no leftovers!
