Chicken Thighs With Carrots and Potatoes

    I cooked this last week, and my husband loved it. He said it was 'good comfort food' and requested that I 'don't change a thing' - even though I prefer a bit more seasoning (especially on the veggies). I like that it was easy to put together and that all ingredients are commonly on-hand. I used a combination of skinned thighs & drumsticks, and it was very tasty. Good everyday meal.

    this was really good, i increased the chicken a bit, 4 large potatoes and 2 cups of broth and increased the cooking to 7 and a half to 8 hours, fed 5 adults and 1 toddler. a recipe im keeping for the books :)

    Very easy to prepare. Good recipe to cook ahead for the week. Added more chicken broth when re-heating as it looked a bit dry. Will try chicken breast next time. Used boneless thighs since that's what I had on hand but they shrunk during cooking.

    Interesting simple recipe. Yet I have to question the adding salt to chicen broth...and yet again the salting the chicken pieces. Why add extra sodium to our meals when there are spices like McCormicks salt free and no msg to use in place of all our too highly salted foods.

    I would not make this again. The chicken did not come out with the same appealing color as in the picture. It was edible but unappealing in color. The onions were spongey and tasteless. Potatoes and carrots were gray in apperance and not cooked through, even though the dish cooked for over 6 hrs. The overall dish lacked flavor and was unappealing.

    Very good. I was skeptical about this recipe because all of the low reviews but was presently surprised. The potatoes were perfectly soft, and the chicken was flavorful and tender. It is a very simple recipe but still yummy.

    I tossed in a little parsley, and next time I'm going to add more parsley and more time. Was a good recipe, but I think with a little more herbs, it would be fantastic.

    Great recipe!! Cheap, easy, and so yummy. My family loved it and asked for seconds. I served it with some chicken gravy. There really is nothing to tweak with this recipe, it's just perfect. A keeper!

    Made this twice however it really needs double the amount of spices.. Plus I add cayenne pepper for that extra kick.. I really rub the spices into the chicken. Comes out great!!

    My first crock pot meal, and this was so good! Whole family said it was yummy! Before serving I shred the chicken and added back to pot, to make the food extremely child friendly. I made it just like it says on the recipe, except that I added one potato more. I will use this recipe again!

    After reading the reviews I decided to make a few tweaks to this recipe and it came out amazing. I put the onions potatoes garlic and carrots in the bottom of my slow cooker. I then mixed a packet of Lipton onion soup mix with a 1/4 cup of white wine and 1/2 cup of water and poured this mixture over the veggies. I also put salt and pepper on the chicken and seared them in a skillet w a tablespoon of oil just to brown both sides adding some color and flavor to the chicken since someone mentioned the chicken didn't look like the picture. I arranged the chicken on top of the veggies and set on low for 6 hours. So delicious I think next time I would even try a whole chicken for something different. I only gave the recipe 3 stars because I tweaked it but the version I did I would give 4-5 stars

    Delicious!! As per other reviews, I doubled the thyme and added parsley. Used 2 cups of chicken broth, poured over the veggies and potatoes. Turned out perfect!

    Made this the day after surgery for a simple meal for the family. I used one can of cream 0f chicken with one cup of chicken broth. Added seasonings to my liking and used boneless thighs. Put my crockpot on high for four hours. Amazing! My ultra picky eaters went crazy. I will use this recipe again:)

    I made this exactly as the recipe says with one exception, I used about 50% more of the salt and pepper and paprika to make sure the chicken was coated completely. Everyone loved it.

    I don't see how this got five stars. It was a failure. I followed the directions except I took the advice of some others -- I browned the thighs a little and doubled the thyme. It still came out pretty much tasteless. Even worse, the potatoes and carrots didn't cook. Six hours and they were still hard. I took the chicken out, turned the crock pot up to high. Hours later the potatoes and carrots still weren't thoroughly cooked. Had everything cooked I'd give this another try and up the herbs. But given the utter failure on the veggies, I won't bother.
