This recipe is very delicious. Not a light recipe but a sure motivator for eating healthy earlier and having a post dinner walk. My fiancé loves this dinner for date night at home. I serve it with whole grain pasta and a salad of mixed baby lettuce, grumbled blue, carrots, red onion, 2 sliced strawberries and a few tart cherries. The recipe calls for traditional egg wide noodles. I use whole grain noodles. This substitution makes the dish more complex, hearty and healthy. Plus, you won't feel so bad about all the cream. Yummy! The sauce does take a while to cook down so plan accordingly. Use the cream and keep yourself from adding any sour cream. The Brandy adds a lot of flavor. If you are concerned about the alcohol content it is ignited and burns off. If omitting the Brandy find a good flavor substitution as it really adds to the dish. Serves 2. Use two boneless pounded breasts. I suggest making extra sauce.
