I really wanted to try some recipes from the Cooking Light Fresh Food Fast series, so I thought I would give this one a try. I think this recipe has the most random list of ingredients. Soy sauce, roasted bell peppers, pecans and craisins? I didn't look closely at all these ingredients before deciding to make this recipe. I love lots of crunchies in my chicken salad, so I thought texture wise it would be good. So you're wondering, is it good? I like it. It's definitely different than any chicken salad i've had before, and the flavor combinations are interesting, but I like the CL chicken salad with green apple in it much better. I could see a variation on the theme using the roasted bell peppers though (and maybe some homemade CL pesto).

This is actually a LOT like a salad a local place makes near me, so I'm happy to have this recipe. I think it's better than the local cafe, actually. The right balance of textures, and the soy sauce really gives it that extra flavor it needs to balance out the heaviness of the mayo. Make sure to use the unsweetened dried cranberries, though—I made this with sweetened dried cranberries by accident once (they were on sale and I wasn't paying attention) and it was definitely too sweet. Good on top of fresh baby spinach too if you want to incorporate more greens into your diet.
