Chicken Salad with Fresh Peaches and Blue Cheese

  • 3 tablespoons white wine vinegar
  • 3 tablespoons orange juice
  • 1 tablespoon honey
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • 6 cups chopped romaine lettuce
  • 1/2 cup (2 ounces) crumbled blue cheese
  • 3 cups coarsely chopped cooked chicken breast
  • 2 cups chopped peeled peaches (about 2 medium)
  • 1/4 cup chopped smoked almonds


  1. Combine first 5 ingredients in a small bowl. Add olive oil, and stir with a whisk.
  2. . Combine lettuce and next 4 ingredients in a large bowl, and toss gently. Drizzle with vinaigrette; toss to coat.
