Make the most of summer produce by creating a hearty salad with fresh, sweet peaches; roasted chicken; smoky almonds; and sharp blue cheese. It's a great way to use leftover cooked or rotisserie chicken.
3 tablespoons white wine vinegar
3 tablespoons orange juice
1 tablespoon honey
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
6 cups chopped romaine lettuce
1/2 cup (2 ounces) crumbled blue cheese
3 cups coarsely chopped cooked chicken breast
2 cups chopped peeled peaches (about 2 medium)
1/4 cup chopped smoked almonds
How to Make It
Combine first 5 ingredients in a small bowl. Add olive oil, and stir with a whisk.
. Combine lettuce and next 4 ingredients in a large bowl, and toss gently. Drizzle with vinaigrette; toss to coat.
