Chicken Salad Sandwiches

Yield 1 1/2 dozen


  • 3/4 cup diced cooked chicken
  • 3/4 cup finely chopped celery
  • 2 tablespoons mayonnaise
  • 2 teaspoons lemon juice
  • Salt to taste
  • Dash of pepper
  • 12 slices white bread
  • Lettuce leaves

How to Make It

  1. Combine chicken, celery, mayonnaise, lemon juice, salt, and pepper; mix well.

  2. Remove crust from bread. Spread 1/4 cup chicken salad on 6 slices of bread; top each with a lettuce leaf and remaining slices of bread. Cut each sandwich into 3 rectangles.
