This recipe is pretty much the way that I was afraid of because of the amount of soy sauce in the recipe. I found it waaay too salty. I'm pretty sure my blood pressure went up when I was eating it! If I even attempted it again I would cut back on the soy sauce or else substitute it with something else altogether. Plus even though I've had recipes that have a combination of beef with peppers and find it pretty satisfying for some reason the chicken with peppers seemed to be missing something.
Chicken & Peppers Stir-Fry
- 1/2 cup soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon ketchup
- 4 cloves garlic, minced
- 4 boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/2 red pepper, chopped
- 1/2 yellow pepper, chopped
- cooked rice
- In a bowl, whisk together soy sauce, oil, catsup and garlic. Heat mixture in a skillet over medium-high heat. Add chicken; cook and stir for 3 minutes. Add peppers; cook and stir 5 minutes, or until chicken is cooked through. Serve over hot rice.
