Serve this coloful Chicken and Peppers Stir-Fry over a bed of hot rice for an easy weeknight entree.
1/2 cup soy sauce
2 tablespoons sesame oil
1 tablespoon ketchup
4 cloves garlic, minced
4 boneless, skinless chicken breasts, cut into 1-inch pieces
1/2 red pepper, chopped
1/2 yellow pepper, chopped
In a bowl, whisk together soy sauce, oil, catsup and garlic. Heat mixture in a skillet over medium-high heat. Add chicken; cook and stir for 3 minutes. Add peppers; cook and stir 5 minutes, or until chicken is cooked through. Serve over hot rice.
