    I love new panini recipes. I like to try one every Friday night. This one was great!. I did omit the sun dried tomatoes because they bother my stomach. I also added some fresh rosemary. The sandwich is so good. You can use any cheese you have such as swiss or mozzarella too. I had a nice ciabatta roll that I used. This is a great use for leftover chicken but you can always use grilled chicken breasts as well. I would recommend this!

    We really enjoyed this recipe. The second time we made them, we increased the mayo spread by 50%, and we just finely chopped the capers and sun-dried tomatoes, rather than using the mini food-processor. Also, we couldn't find cremini mushrooms, so we used baby portabellos.

    This was filling, but that's about it. I found it boring and one dimensional, the flavors of the sundried tomato and capers did not come out as much as I expected.

    This is a great change from the everyday sandwich. We left out the capers.

    Love these paninis! This is the 3rd time we make them and they come better every time. I love the fact that they hold pretty good for the next day to take them to work. We also added a bit more of mayo, sun dried tomatoes and capers.

    This is a tasty recipe but you need to add more than the mayo,tomato & capers called for in the recipe. We also added some shaved black forrest ham with the chicken. Great recipe and thanks.

    Just ok. I've had better CL paninis. If I make them again, I'll use pepperjack cheese to give them a little more flavor. The mushrooms were good though. Maybe a little steak sauce in place of the capers and tomatoes. Hmmmm.....

    I always use sour cream instead of mayo. The sun dried tomatoes made it rather sweet so I would up the capers next time. I don't love mushrooms but liked this sammie alot! I used buttons.
