1.In large bowl, combine chicken. garlic, oregano, pepper and salt to taste, vinegar, olive oil, prunes, capers and juice and bay leaaaaaves. Cover and marinate refrigerated overnight.
2. preheat oven to 350
3. arrange in single layer in one or two large shallow baking pans and spoon marinade over it. Sprinklke chicken wwith brown sugar and pour white wine around.
4. bake for 1 hour basting frequently.
5. serve and sprinkle with parsley or cilantro
May be served at room temp or hot
