Add tropical flair to a main dish chicken salad with chopped fresh mango and a creamy dressing spiced up with ginger and curry powder.
Makes 4 servings
1/4 cup mayonnaise
1/4 cup sour cream
2 teaspoons lemon zest
2 tablespoons fresh lemon juice
2 teaspoons curry powder
1 teaspoon grated fresh ginger
1/2 teaspoon salt
1/8 teaspoon ground cayenne pepper
3 cups chopped or shredded cooked chicken
4 cups chopped Napa cabbage
2 cups peeled, pitted, and chopped mango
1 small red bell pepper, chopped
1/2 English cucumber, chopped
1/2 cup chopped fresh cilantro
1/4 cup chopped red onion
1. Whisk together first 8 ingredients in a small bowl.
2. Combine chicken and remaining ingredients in a large bowl. Add dressing, tossing to coat. Serve immediately.
