Excellent! A few changes - I took some fresh chicken breast, poached it and let it cool enough for me to finely dice it. I added it to the cole slaw mixture, dumped the sauce over top and mixed it well. I didn't even bother with the peanuts. It would be good with some green onion in there. The sauce is very good and would be good on so many things.

These lettuce wraps were delicious! I changed the recipe a little. I used ground chicken instead of grilled. I browned the meat and then added all the liquid ingredients and the peanuts and water chestnuts. I will mke this again for sure!

Great!!!! Light, healthy protein, low carb, tons of flavor & good for a hot summer day. Like the other reviewer, I poached and shredded the chicken. Instead of wrapping it up in lettuce leaves, I just tossed the slaw mix with the chicken, chestnuts and peanuts like a salad. Then topped with some of the dressing, which I watered down a little to thin it out. I didn't toast the peanuts, they are already dry-roasted. I was dining solo, so I didn't mix the entire batch up, just tossed a single serving together for tonight's meal. Looking forward to having more for lunch tomorrow!

I love this! I make it about every other week. It is a great quick meal. I usually substiute broccoli or rainbow slaw for the cabbage.

This was a great recipe! I used ground chicken, like some of the other reviewers. I browned it and then added the water chestnuts (which I chopped) and broccoli slaw (instead of cabbage). After cooking a few minutes, I added the sauce, and heated it through. I decided to leave out the red pepper (for my 7 y.o. who loved the recipe). Instead, I made a side sauce of soy sauce, rice vinegar, and chinese hot mustard. It was delicious....and I will definitely make it again!!

So delicious and easy! I got a great, quick summer meal without heating the kitchen.
