Chicken Lasagna

Ingredients

  • 2 tablespoon(s) olive oil
  • 3 clove(s) garlic minced
  • 1 whole(s) small onion chopped
  • 1 teaspoon(s) black pepper
  • 2 can(s) cream of mushroom soup
  • 1 cup(s) milk
  • 2 teaspoon(s) sage or poultry seasoning
  • 4 piece(s) chicken breasts cubed and marinated
  • 1 whole(s) green pepper chopped
  • 10 ounce(s) cottage Cheese
  • 8 ounce(s) cream cheese
  • 1 tablespoon(s) garlic powder
  • 1 package(s) Lasagna noodles cooked al dent
  • 8-10 slice(s) bread cubed
  • 1 stick(s) butter 1/2 cup melted

Preparation

  1. 2 Tb olive oil
  2. 2 cloves of garlic minced
  3. 1 small onion chopped
  4. Cook until transparent
  5. Add Cubed chicken
  6. Sauté until brown (Does not have to be completely cooked)
  7. Remove Chicken and put in bowl cover with foil
  8. In the same pan add
  9. 2 cans cream of mushroom soup
  10. 2 tsp sage or poultry seasoning
  11. 1 tsp black pepper
  12. 1 can of milk
  13. Simmer for 5 min
  14. Add cooked chicken to sauce set aside

  15. Mix: Beat until well blended
  16. 1 package (8oz) cream cheese
  17. 10 oz cottage cheese
  18. ½ cup chopped green pepper
  19. ¼ cup chopped sweet onion
  20. 1 Tb Oregano
  21. 3 minced garlic cloves

  22. Cook Lasagna noodles al dent

  23. In 8X11 or lasagna pan
  24. Layer sauce mixture, lasagna noodles, cheese mixture
  25. Sauce mixture, Lasagna noodles, cheese mixture
  26. Sauce mixture lasagna noodles Sauce on top

  27. 8 – 10 slices of bread cubed in a large bowl (need about 4 cups)
  28. 1 stick of melted butter
  29. Add butter while tossing the bread to coat the bread with butter
  30. Sprinkle with Garlic powder
  31. Spread bread over top of Lasagna for top layer

  32. Bake at 350 until bread is nicely brown about 45 min – 1 hour
  33. Take out of oven - Let rest 10 min before serving
  34. Serve with toss salad and a good dry white wine.

  35. Chicken options:
  36. cubed chicken breast in olive oil, white wine, garlic, oregano cook above
  37. OR
  38. Purchase rotisserie chicken already cooked and pull meat off
  39. OR
  40. Use leftovers (Turkey or chicken)
