Melt butter and saute onions. Stir in flour and seasonings. Slowly add chicken broth. Whisk and simmer for about 5 minutes or until it is thick and bubbly. Add chicken.
Combine cottage cheese, egg, and mozzarella cheese; set aside. Layer 1/3 chicken, then noodles, and then cheese mixture. Repeat 1 time, ending with chicken on top. Sprinkle fresh parmesan cheese on top. Bake at 350 for 1 hour, uncovered; then let sit 10 minutes.
