This was delicious. I changed up a few of the vegetables, but I followed everything else completely. It was simple and my family absolutely loved it. I served it with brown rice and fresh bread.

We left the breasts whole and cut the veggies in strips instead of chunks and grilled them like that (instead of making kebabs), but it turned out really well.

This was easy to prepare and a very tasty weeknight meal. We used the bbq. Served with bbq eggplant slices, steamed green beans and garlic flatbread. The kids even liked it. I did add some extra veggies to the skewers and kept the onions separate as they needed more time to cook.

Marvelous! I doubled the recipe. The only changes I made were that I used fresh garlic and green instead of yellow peppers. Next time, I won't double the sauce - it was nice, but we didn't need quite that much. Served with steamed fresh green beans, corn on the cob, and crusty bread. Everyone - even the kids - loved this one!!

This was easy and delicious! A refreshing change from grilled chicken breast. I used yellow, orange and red peppers and mushrooms, but otherwise followed the recipe exactly. We were going to grill them, but it started to rain so I ended up broiling them like it says to, and they were still fabulous!!

YUM! I used zucchini, onion, and cherry tomatoes (that's what I had on hand). SOOO good!

I substituted 3 TB 0% plain greek yogurt for the 2 TB sour cream + 2 TB low fat plain yogurt & still enjoyed the pesto. I baked them in an oven but I imagine that they would work well on a grill. If possible, make your own pesto instead of a store-bought version. I would definitely make this again & the sauce could work well with other dishes.

Served with corn on the cob and crusty bread. Was great and easy. Cooked on the grill--took a bit longer than expected but was very good.

Nothing all that special. Sauce is good but that's all. If I make it again I won't bother with the added task of making the kebobs. Can just broil or grill without the trouble.
